Roasting a Pig on a Hot Summer Night

What do you do when the weather tops 90 degrees on a Saturday evening?  Drinks on the town?  Swimming?  Movie in an air conditioned theater?

Not us.  We hit up a pig roast.
 That's right, a pig roast.  Every year some of Lex's friends stuff a pig full apples, plums, spices and hot lava rock and bury it in their back yard.  The next day they throw a huge party to watch the excavation, then devour the sucker.
 They had the temp measured one year and learned their backyard clay hole oven gets to almost 1000 degrees while baking the pig.

 Fat dripped off the table, and hooves and ligaments were literally falling off the pig.  One year practically turned into the Lord of the Flies with all the kids playing with them.  I was hoping for a repeat this year, but the kiddos were just too well behaved.  The meat was incredibly tender, we could practically pull it off with a fork.

It was awesome.
And absolutely delicious!
